Defrost the spinach then drain off excess water and chop.<\/li>\n<li>Finely dice the onion and saut\u00e9 with the coconut oil in a small frying pan until softened.<\/li>\n<li>Place onion and all other ingredients in a bowl and mix until well combined.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Roll mixture into approximately 20 bite-sized balls. Place on a lined baking tray and bake for 20 minutes. Serve with a wedge of lemon, if desired.
